Ingredients:__
- 3 cups cooked rice (preferably day-old rice)
- 2 tablespoons vegetable oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 cup assorted vegetables (such as peas, carrots, corn, and bell pepper)
- 2 tablespoons soy sauce
- 2 eggs, lightly beaten
- Salt and pepper, to taste
- Green onions, chopped for garnish (optional)
_Instructions:__
1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
2. Add the onion and garlic and stir-fry for 1-2 minutes until fragrant and softened.
3. Add the assorted vegetables and stir-fry for 2-3 minutes until tender-crisp.
4. Add the cooked rice to the wok or skillet and stir-fry for 2-3 minutes until evenly coated with the vegetables and oil.
5. Add the soy sauce and stir-fry for an additional 1-2 minutes until the rice is evenly browned.
6. Push the fried rice to one side of the wok or skillet and pour the beaten eggs into the cleared space. Scramble the eggs until cooked, then mix them into the fried rice.
7. Season the fried rice with salt and pepper to taste.
8. Serve hot, garnished with chopped green onions if desired.
